Wisconsin Roots

Ruby Coffee Roasters started in rural Portage County, Wisconsin, in 2013, with its first batches roasted out of a garage. Today, Ruby's roasting, shipping, and quality control still happen in Nelsonville, Wisconsin.


They've grown, but the approach remains grounded in the work. Know your craft. Respect the process. Do it right.


Ruby calls its approach "Colorful Coffees." Their coffees are intentionally selected to highlight the regions, microclimates, harvests, and producers behind them. The lineup changes with the seasons, giving you a chance to taste coffee from different origins at its best.


That commitment to quality has earned Ruby national attention, including recognition from Food & Wine, which named Ruby the best coffee roaster in Wisconsin in 2022.

We don't just order coffee beans from Ruby. We work with them. That relationship gives us a direct line to the people behind every roast. We can ask questions, learn what's happening with a harvest, taste coffees, fine tune ideas, and keep getting better.

It's also how Blue Collar Creamery came to be.

We worked alongside Ruby Coffee Roasters to develop our own special blend for Blue Collar Coffee. Blue Collar Creamery is smooth, balanced, and approachable, built to work hard across our menu. You can drink it as your morning coffee or taste it in the espresso behind your favorite handcrafted drink.


It's the foundation for drinks like our signature Northwoods Latte, made with real maple, cinnamon, espresso, and milk.


Ruby puts just as much thought into what happens before the beans reach Nelsonville. They prioritize traceability, responsible sourcing, sustainability, and relationships with coffee producers.


When we say we know where our coffee comes from, we mean it. We know the roastery. We know the roasters. And we know the work behind every batch.

Our roots run deep in Wisconsin, and we bring a piece of them with us wherever Blue Collar goes.
